DIY: Easy Ice Cream Cupcakes Recipe

Summer and birthdays just go together like cake & ice cream. My husband’s birthday is coming up, which led me to Pinterest to search for cake ideas. 

…And then I started thinking about ice cream cakes.

By this point I was craving something sweet, and thinking about how busy moms do not have time to make lavish cakes. (Seriously, who has the time to make those fancy ones on Pinterest?!)

Then I had a thought…cupcakes! I decided to make ice cream cupcakes the easiest way possible. I promise, these are so easy and so delicious. Give them a try!

Easy Ice Cream Cupcakes Recipe

Ingredients:

  • Boxed cake mix – any flavor (and eggs, oil, water)
  • Cupcake papers – foil lined
  • Carton of ice cream – any flavor
  • Can of whipped cream
  • Sprinkles

*Do steps 1 and 2 a few hours ahead of time.

Step 1: Cupcake Layer

  • Mix up a boxed cake mix according to the package directions
  • Place cupcake papers in cupcake pan (I only made 11 and used the rest of the batter to make a 9×9 square cake)
  • Fill each cupcake paper with 1 Tablespoon of batter
  • Bake @350 for approximately 10 minutes
  • Cool cupcakes completely

Step 2: Ice Cream Layer

  • Let ice cream soften for several minutes before scooping
  • Place a scoop of ice cream on top of cake to fill up cupcake liner
  • Put cupcakes in the freezer for at least 1-2 hours until ready to serve

Step 3: Topping

  • Take cupcakes out of freezer and top with canned whipped cream

Step 4: Sprinkles

  • Need I say more?

 TA-DA!!! Call me Betty! (As in Crocker!)

 

What can I say, these are EASY ice cream cupcakes. They aren’t DQ or Cold Stone. But they also aren’t 20 dollars!
