It’s October, and things are getting intense. It’s that time of year where we are reminded how divided we really are as a culture. Most of us have strong opinions and we are likely not going to be swayed by anyone else. I’m somewhat embarrassed to find myself in the minority this time, begging to find something that can unite us all.
I’m sorry… did you think I was referring to politics? Absolutely not. This is more of a black and white issue… okay, more of an orange, yellow, and white issue…
CANDY CORN.
People either love it or hate it. I’m one of those people who can’t walk by without grabbing at least one candy. However, I’m well aware there is a large group of people just waiting for Halloween to pass so they can toss them all in the trash. But what if there was a way–a delicious way–to put that candy corn to good use and ultimately bring us all a little closer together? Well, there is.
Homemade Butterfingers.
They couldn’t be easier. With only three ingredients (and some black magic transformation that occurs when you mix melted candy corn with peanut butter) you can have homemade butterfingers in less than 30 minutes.
Ingredients:
1 1/2 cup candy corn
1/2 cup creamy peanut butter
2 cups chocolate chips (candy melts or almond bark work great also)
Instructions:
Step 1)
Melt candy corn in a microwave safe bowl. Microwave for 30 second intervals, mixing each time until melted. (1-2 minutes should do the trick)
Step 2)
Melt peanut butter for 30 seconds and pour into bowl with melted candy corn.
Step 3)
Combine melted candy and peanut butter. It will become thick and difficult to mix so work quickly before it cools. This is where the magic happens.
Step 4)
Place mixture on a silpat mat or parchment paper. I chose to roll mine about half an inch thick and cut into mini ‘fun size’ bites. You could place them in molds, or roll them and cut them into any shape you’d like. You just need to work quickly, because once the mixture starts to cool it is very difficult to cut.
Step 5)
Once the mixture is cut and cooled, melt your chocolate coating. Coat each piece in chocolate, and set it back on silicone mat or parchment paper to set.
Tip: If you use candy melts or almond bark, you will get a nice hard coating. If you are using chocolate chips, you will either want to temper your chocolate, or you will need to refrigerate them.
Step 6)
Enjoy the magical transformation of candy corn to Butterfinger.
