One of our Iowa City Moms Bloggers posted a question on her Facebook page this week asking, “What kind of soup is everyone making this week?” I jumped in and shared a few of my recent faves. And so did a lot of other people. She received 50 recipe suggestions! Chicken Noodle. Chili. Hearty vegetarian soups. Slow- and pressure-cooker options. That’s a lot of people making soup!

This soup has been in my weeknight rotation during cold months for a few years now. My whole family loves it, and the sneaky add-in of grated zucchini adds fiber and extra nutrition to an already delicious soup!
Hearty Soups and Stews
I served this over mashed potatoes and it was the perfect comfort food. Be sure to follow the author’s tip below for the addition of potatoes/root vegetables:
Tip: If you want to add root vegetables to your stew, stir in diced carrots and cubed potatoes after the stew is done (adding at the beginning will result in carrot-mush) and pressure-cook everything for five more minutes under high pressure. Manually release the pressure, adjust seasoning to taste, and serve.
This chili is the only true “short-cut” chili (30 minutes!). I’ve found that fills the chili bill without simmering all day!
