Before the pandemic started, I had a bad habit of keeping the kitchen closed down too much once the weekend hit. By Thursday afternoon, I was already thinking about what restaurant I wanted to go to or where I wanted carry out from.
Obviously, since March the ability to dine in at a restaurant of my choosing on the weekends has been diminished — enter fun weekend meals at home.
I consider one of the positives of this pandemic situation is my newfound appreciation for spending more time at home — and definitely when it comes to eating-in more on the weekends. I’ve found that it’s nice to plan out a fun, more complicated, and less-healthy meal than what we usually eat on the weekdays — and just relax while we spend time preparing and dining together.
We’ll turn on some music and turn it into a nice, slow evening.
Below are a few of our favorite “fun weekend meals” that we cook at home:
- Steak Gorgonzola Alfredo
- Chicken Lips
- Ranch Chicken Enchiladas
- Instant Pot Beef and Broccoli
- Grilled Cheeseburger Wraps
- Hibachi Chicken with Fried Rice
