The stress of pandemic life has left me wanting to simplify just about everything — and dinner is no exception. I started making this easy sheet pan dinner recipe when two of my kids had COVID-19, and I needed something truly easy. For something so simple, it tastes really, really good. Hope you enjoy it!

Ingredients
- 3 medium-sized sweet potatoes
- 3 tart red apples Gala, Pink Lady, and Honeycrisp work great. I buy whatever is on sale
- 1 sweet onion Vidalia or similar
- 2 packages polska kielbasa Any smoked sausage will work fine
- 2 Tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp Pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme

Instructions
- Preheat oven to 425 degrees. Line sheet pan with foil and spray with Pam or other cooking spray. Note: I like to use 2 sheet pans for this quantity because I like how it cooks up better, but it does all fit on one if you've only got one available.
- Cut up sweet potatoes, onion, and apples to be roughly the same size. Half-inch to one-inch pieces work well.
- Cut sausage to 1 1/2 - 2 inch chunks.
- Put apples, sweet potatoes, onion, and sausage in a large mixing bowl.
- Add olive oil and seasoning to the mixing bowl and stir until the olive oil and seasonings are well mixed in.
- Put everything on your prepared sheet pan and bake for approximately 30 minutes, stirring on the pan halfway through cooking. Enjoy!
