Instructions
Step 1: Prepare the chicken
  1. Cut chicken into 1 inch bite size pieces.
  2. Whisk corn starch, 1/2 Tbsp salt, and 1/2 tsp pepper in a large bowl.
  3. Add chicken to cornstarch mixture and toss to coat.
Step 2: Prepare the Sauce
  1. Spray a medium size mixing bowl with Pam or other cooking spray.
  2. Mix together all sauce ingredients until combined.
  3. Set aside.
Step 3: Cook & Serve
  1. Heat 3 Tbsp to 1/4 cup of vegetable oil in a large skillet.
  2. Cook chicken on high/medium high until almost cooked through.
  3. Remove chicken to a plate and add sauce to skillet.
  4. Cook sauce about 2 minutes until thickened and reduced.
  5. Return chicken to pan. Toss to coat in sauce and cook 1 minute more until cooked through.
  6. Add sliced green onions.
  7. Serve over rice.
