I am a busy working mom whose kids seem to do all the things. It often feels like we are booked for evening activities 9 out of 7 days of the week. But, we try really hard to prioritize eating dinner as a family. So, quick and easy dinner recipes are a must for me. This recipe is both easy (chop, measure, stir, and bake!) and flavorful. And, if you are a meal planner, you can prep it in advance and pop it in the oven on the night you need it.

Ingredients
- 2 packages Zatarain's Andouille Sausage, sliced into 1/4 inch rounds
- 1 lb fresh green beans, trimmed For extra easy prep, get two 8 oz packages of washed and ready to use green beans
- 1.5 lb small gold potatoes, cut into quarters or bite size pieces
- 1 vidalia or other sweet onion, roughly chopped
- 4 Tbsp olive oil
- 3/4 tsp salt
- 3/4 tsp Pepper
- 3/4 tsp garlic powder
- 1 tsp Italian seasoning

Instructions
- Preheat oven to 425 degrees.
- Line 2 baking sheets with parchment paper
- Add all ingredients to a large bowl and stir to coat evenly with olive oil and seasonings
- Place all ingredients evenly spaced on your two prepared baking sheets
- Bake 25-30 minutes until potatoes are cooked through and sausages begin to crisp
- Enjoy!
