This week we’re answering the age-old question….what’s for dinner? Whether you work from home or outside the home, it always seems to be a conundrum when 5:00 rolls around. So our team has put together a few of our favorite weeknight dinners in order to help make meal planning a little easier!! Crock Pot French Dips
Rump Roast (any size you want–I always buy bigger to get a few nights worth of meals)
1/2 c. soy sauce
2 packets powdered beef stock
3-5 cloves crushed garlic
1-2 Bay Leaves
1-2 T Worcestershire Sauce
Sprinkle both sides of the rump roast with salt and pepper.
Heat 1-2 T. of olive oil in a skillet on the stove over medium high heat.
Sear both sides of the roast to get it nice and brown. (About 3-5 minutes per side)
Add the seared meat to the crock pot and throw in a palmful of thyme, 3-5 cloves of crushed garlic, and a couple of bay leaves. Next, sprinkle in the powdered beef stock. Add the 1/2 cup of soy sauce and Worcestershire sauce. Then add enough water to the pot to completely cover the meat. Cook on low 7-8 hours.
Come home from work and shred the beef. Toast hoagie buns and a slice of swiss cheese in the oven until the cheese is melted. Add the shredded beef and use the juice in the crock pot for dipping!
*Part of the reason I like to make this so much is because there are many different ways you can use condiments to total change the flavor. Add sautéed peppers and onions or (my fave) pickled jalapeños, pepper jack cheese, and wilted spinach.
